Fire is the fundamental heart of cooking – live fire grilling, smoking and roasting. We exist to refine these crafts.
The magic is in the fuel: seasoned wood, charcoal or a deliberate combination of both. With so much variety in flavor profiles, we think you should have a say in the selection of fuel. Maybe you’d like gentle California Oak on your steaks, but prefer a more pungent Mesquite on your burgers… the world is your smoker! If you do need help deciding, we can point you in the right direction – hickory smoked brisket is a traditional favorite; fresh fish is delicious over grapevine or apple wood; vegetables grilled over a super-hot mixture of charcoal and oak is a chef favorite!
Our fuel is sourced from different regions of the US and Mexico. Pecan comes from Georgia, Hickory from Tennessee, Post Oak from Texas and California Oak from Ramona. Mesquite charcoal comes from Mexico and Oak Charcoal comes from Utah. Grapevine comes from any wineries changing varietals or going through a heavy pruning!
The creative and thoughtful ways your food is cooked is reflected in the finished dish. Everything starts at home base, our brand-new kitchen off Marindustry Drive, in the Miramar area (let us know if you want to come by for a tour, we are proud of our new digs!). Our kitchen full of culinary crackshots prep everything to be sent to your party, where most of the food will be cooked on site. This is also home to our Southern Pride smoker, which can hold up to 1,000 pounds of any kind of meat and is used for brisket, ribs, chicken and pork.
On site is where we can really WOW your guests with our customized, portable grills with built-in ovens, made just for us in Tijuana. These are stainless steel grills with dual grates on suspension chains, allowing us to control the heat by moving the grates up and down. Fish, vegetables, steaks, burgers – whatever the grilled favorite, it can be perfected on these beauties! The ovens can be used to finish empanadas, bake apple crisp or roasted root vegetables. Whole hogs and pancetta are prepared in our rotisserie smoker on wheels that we can roll onto our trucks and into your party. Glass siding allows your guests to watch the food slowly roast before their eyes. We can cook just about anywhere and it doesn’t have to be showy – it’s your choice if you want your guests to witness the magic or have it happen behind the scenes. The meal is the same either way, incredible.
